Egg-free Mango loaf Cake 

Its a no fuss cake bursting with taste of seasonal dashari mangoes , no dairy ,no egg is included in making, yet so simple to prepare. Topped with Mascarpone cheese and Sun dried rose petals .  Absolute must try.


 


 


Prep - 15 min 
cook- 30 min

Ingredients 
  1. 1 cup all purpose flour 
  2. 11/2 tsp baking powder 
  3. 1/4 tsp salt 
  4. 1/2 tsp cardamom powder
  5. 1/2 cup light brown sugar
  6. 1 cup fresh mango puree ( 3 large mangoes )
  7. 1/4 cup oil 
  8. 1 tsp vanilla extract 
  Frosting
  1. 1/4 cup Mascarpone cheese 
  2. 2 to 3 tbsp cream 
  3. 1 tbsp dried rose petals (edible)

METHOD 
  1. Preheat the oven at 180c . Grease and flour your 8 inch loaf pan.
  2. In a medium bowl combine together the flour , baking powder , salt and cardamon powder.
     
  3. In  a another large bowl, whisk together sugar,mango puree,oil  and  vanilla until well combine.
  4. Divide the dry ingredients mixture and gradually add in wet ingredients , whisking gently until the mixture is just combine. (don't  over mix the batter )

  5. Pour the batter into prepared pan and give it a gentle tap to remove the air bubbles.
  6. Bake for 35 to 40 min , until the toothpick inserted comes out clean.
  7. Cool the cake in the pan for  about   20 min and then invert out gently. 
  8. For frosting  let the cake cool completely. 
How to do Frosting 
  1. Take Mascarpone  cheese and cream and beat until combine. Spread the cheese mix over the cool  cake  and topped with dried rose petals.
Simple Solutions
  • Use  only fresh mangoes , this cake can be enjoyed without frosting also, only thing is frosting only enhances the taste .If not using frosting  topped it with nuts of your choice like pistachios, almonds  walnuts over the cake and then bake.
  • You can omit the cardamom if you wish.
