Egg Free Orange Cup Cakes

These gorgeous looking beauties are not only soft , but pack with goodness of orange juice topped with butter cream frosting . Each bite is worth and oozing with  orange flavor.They are v easy and simple to make and bake and instant hit with family. 



Ingredients 
1 cup flour
1/2 tsp baking
1/2 tsp baking soda 
1/2 cup  brown sugar
1/4 cup refined oil
1 cup orange juice ..I have used real orange juice 
1 tbsp of orange marmalade or jam
  
For Butter Cream frosting (optional) 

1/2 cup unsalted butter (neither cold nor too soft ) but firm @room temp
1 cup icing sugar 
1tsp vanilla essence 


few drops of gel food colour ... i have used Wilton Gel food colour
 
METHOD 

  • Preheat the oven to 180C,  line a muffin tray with cupcakes  liners . keep aside 
  • In a medium bowl mix together flour , baking powder and baking soda. 
  • In an another large mixing bowl take oil and sugar and mix well,  to this add orange juice and  orange marmalade  and give a nice stir.
  • Add the dry ingredients(flour mix) in 2 to 3 batches to wet batter , mix just to combine  . Do not  over mix the batter. 
  • Scoop the batter into muffin cups  upto 3/4 and Bake for 18 to 20 mins or tooth pick inserted comes out clean. 
  •  Let it cool completely before  frosting( for about 2 hrs )  
For Butter cream  frosting 

  
Take butter in a mixing bowl and beat with beater for about 4 to 5 min till it becomes pale , gradually add sugar in 3 to 4 batches till it becomes thick,  add vanilla essence  , now add few drops of gel food co give a stir . Spoon the frosting in a piping bag with nozzle of your choice. 
Make a desire pattern.

Tips for handling oven

                                                                                        
*How long you should preheat the oven ?                     
The average temperature to preheat an oven to 180C
 for about 15 minutes ...( IT also means that to heat the oven 15 mins prior without putting anything )

*Is it necessary to preheat convectoin oven ?
Yes, all convection ovens need to be preheated.

*Why Preheating an oven is important ?
It is important with baking when you use Baking powder, baking soda  or   yeast as leavening , which react to heat.
  

  * OVEN temp may vary from model to size , so one has to see that but ideal temp in baking is from 180C to  160C  SO keep a  little check while things are getting baked. 

*When you are using a dark nonstick pan for baking, you should reduce your baking temp by 25c and check for doneness a few mins earlier than recommended in your recipe.
