Madagascar Eggless Cake

Madagascar Banana Sunflower Seed Eggless cake

Madagascar Banana Sunflower seed cake is breakfast or High Tea cake, loaded with exotic mix of Madagascar Vanilla and Sunflower seeds baked with banana puree and mixed nuts.

Ingredients

  • Chakki Atta (Freshly ground wheat flour)           - 1.5 Cup
  • Ripe Banana          - 2 Large
  • Baking Soda          - 1/2 Tsp
  • Baking Powder      - 1 Tsp
  • Salt                         - 1/8 Tsp
  • Sunflower Seeds    - 2 Tbsp
  • Mixed Nuts            - 1/4 Cup
  • Brown Sugar          - 1/2 Cup
  • Madagascar Vanilla - 1 Tsp
  • Sunflower Oil        - 2/3 Cup

METHOD


Prep Time      - 30 Min
Baking Time   - 35-40 Min

Preheat oven to 325F/ 160c 
Grease and flour a 9 inch loaf pan 


  • Sieve the flour and mix well with baking soda, baking powder and salt. Keep aside. 
  • Take a ripe banana, peel and mash it well with a fork so that it looks like a puree. Once the banana is well mashed add sugar. Add oil, Madagascar Vanilla and stir it with hand whisk or hand mixer until sugar is completely incorporated and oil is mixed evenly. Now our wet ingredients are ready. 
  • Now add flour mixture and mix them. Do not over mix the batter. Final batter should be thick.
  • Pour the batter in the prepared tin , now add mixed nuts and Sprinkle 2 tbsp of Sunflower seed on the top.
  • Tap the pan 2-3 times so that air bubbles are removed.
  • Bake it in preheated oven fr 35-40 min. Check with knife for consistency of baking. Knife should come out clean.
  • Allow the cake to cool in pan for 10 Min.
  • Once done cut in to pieces and serve warm.
