Banana Chocochip Muffins

Banana Chocochips Muffins




Insanely delectable fluffy bakery style banana muffins with chocochips. Banana makes these muffins ultra flavourful. Ideal for grab and go breakfast.

Ingredients (for 12 muffins)
1½ Cup all purpose flour
3 Table sp good quality coco powder
1 T sp baking soda
A pinch of salt
½ Cup soft light brown sugar
1 Cup or 3 ripe Bananas (overripe banana would do)
½ Cup vegetable oil
2 Eggs medium to large (lightly beaten)
½ Cup choco chips

Method
·        Preheat the oven to 180 deg C.
·        Lightly grease 12 muffins cups with oil or cooking spray or line with muffin papers.
·        In a medium bowl, mix together flour, cocoa powder, soda and salt. Give a gentle stir.
·        In another large bowl peel and mash the bananas with a fork, making sure it is mashed properly. To this add oil, eggs and sugar making sure everything is fully incorporated.
·        Stir the flour mixture into banana mixture just until combine. Spoon the batter into cups, fill ¾ cup
·        Sprinkle chocochips over the muffins.
·        Bake in preheated oven for 18 to 20 min till muffins rise and peek out of their cups.
·        Allow to cool for 5 to 10 min in their tin

Simple Solutions 
EGG Substitutes for muffins
For each whole egg use 1/4 cup  or 4 tbsp of buttermilk . 
In this recipe use 1/2 cup of buttermilk in place of eggs.
