BANANA
CRUMB MUFFINS
A simple way to make delicious muffins,
flavoured with mashed banana, cinnamon and nutmeg. A blend of delicate flavours with crumb toppings.
1½ cups of all purpose flour
I Tsp Baking Soda
1 Tsp Baking Powder
½ Tsp Pink Salt
3 Medium or Two large mashed Banana
¾ cup sugar
1 egg (lightly beaten)
1/3 cup oil
For the Crumb
2 Table Sp Flour
1/3 Cup packed Brown sugar
2 Pinch of ground cinnamon
Small pinch of Nutmeg
1 Table Sp of Cold butter
Method
Prep Time 15 min
Cook Time 20 min
Total time 35 min
1. Preheat
Oven to 180 deg C. Lightly grease 10 muffin cups or line with muffin papers
2. In
a large bowl mix together 1½ cup flour, baking soda, baking powder and salt.
In another
bowl beat together banana, sugar, egg and oil. Stir the banana
mixture into flour mixture till they combine. Spoon batter into prepared
muffin cups.
Crumb Mixture
3. In
a small bowl mix together brown sugar, flour and nutmeg. Add cold butter until
it resembles coarse mixture. Sprinkle over muffins.
