Wild Honey
Cake with Mascarpone, topped with dried Oranges and Cranberry
This super
moist exotic cake is definitely must try, while baking the whole house is
filled with aromas of wild flavourful honey and looks gorgeous when topped with
cheese and dehydrated fruits. Delicious beyond words!!
Ingredients
·
2 cups all purpose flour
·
2 tsp baking powder
·
½ tsp pink salt
·
2 tsp freshly ground cinnamon
·
A pinch of nutmeg
·
½ cup vegetable oil
·
1 cup good quality honey, use dark flavourful honey
·
1½ cups granulated sugar
·
3 eggs (lightly beaten)
·
1 tsp vanilla extract
·
½ cup strong black coffee (medium hot)
·
(1 tbsp of coffee powder mix with ½ cup of hot water)
Topping
·
½ cup mascarpone cheese
·
2/3 tbsp cream
·
3-4 dried oranges cut into halves
·
Handful of dried cranberries
·
Some chopped walnuts
·
1 tbsp honey (for drizzle)
Method
·
Preheat the oven to 180 deg C. Grease a 10 in Bundt pan or 9 in loose bottom
pan. Make this cake in a large pan.

In a large mixing bowl, combine together flour, baking powder, salt and
cinnamon.

Make a well in the center add oil, honey, sugar, vanilla, black coffee
and eggs. Whisk well until all ingredients are well combined with each other.

Transfer batter into prepared tin and bake for 50-55 min or until
toothpick inserted in center comes out clean.
Allow cake to cool for 10 min in tin
and then invert into serving plate to cool completely.
How to
decorate
Take
mascarpone cheese and beat for a min, now add cream and mix well. Spoon the
cheese cream mix on top of the cake. Decorate with dry oranges, cranberries,
and chopped walnuts. If you wish, drizzle a spoonful of honey over top of cake.
